How can the taste and flavour of a dish be changed simply by replacing the extra virgin olive oil?

A seminar on Olive oil-Food Flavour Harmony by Mr. Karvelas (Certified olive oil taste-tester) and Mr. Mamalakis, the chef well-known to all of us in Greece. Among the trainees at the seminar were two members of the Kyklopas team, Valia Kelidou and Alexandros Tokas. To ensure our exceptional quality oil, we keep up to date with the latest trends, educate ourselves and so evolve.

Mr. Karvelas started the seminar with an introduction to the different categories of olive oil, the basic organoleptic testing of virgin olive oil, the principles of taste and the basic principles of harmony between olive oil and food.

Following that was a practical sensory taste test of 8 olive oils, including Kyklopas early harvest olive oil.

Mr. Mamalakis then lead a theoretical session on choosing the characteristics to combine olive oil and food, how we can recognize harmony, and the most common mistakes that are usually made in this regard.

Finally, the trainees tasted 5 dishes cooked by Mr. Mamalakis, each with 3 different olive oils. Kyklopas oil was among the extra virgin olive oils that were used to try the dishes and it was very evident how replacing only the extra virgin olive oil changes the entire taste and flavour of the dish, as well as the mistake of not choosing good quality extra virgin olive oil in cooking.
