Giannis Karvelas is a Pro Olive Oil Expert at Paratus Europe, a company that organizes certified olive oil courses. Paratus Europe is also the company that we are collaborating with on our sanitary and quality standards certification, ISO. Giannis recently posted a photo depicting the process from the storage of olives all the way to olive extraction on Facebook, commenting that "Nothing happens by chance.
