Sensory evaluation of Ages - A step-by-step guide
Place a small quantity of Ages in a small glass, then follow these steps to carry out a sensory evaluation of Ages:
Hold the glass in the palm of your one hand and keep it covered with your other hand, while turning it slightly sideways and rotating it in such a way as to cover as much of the surface of the glass as possible.
Remove your hand and smell the sample, taking slow, deep breaths to assess the olive oil. This procedure should not exceed 30 seconds. Inhale and exhale through your nose.
The aromatic notes you will notice in Ages according to expert sensory evaluators are banana peel, freshly cut grass, green apple, and tomato stalk.
When the olfactory test is finished, take a small sip of about 3ml of oil and try to disperse it throughout your oral cavity from the front of the mouth to the back, palate, tongue and throat, since the perception of the four main flavours (sweet, salty, acidic and bitter) varies in intensity in different parts of the tongue, palate and throat.
By taking small successive breaths and inhaling air through the mouth, you not only disperse the oil all around the surface of the oral cavity, but also perceive the volatile, aromatic ingredients through the back of the nose.
Now you are slowly starting to taste Ages.
