Traditional Greek family meal
Today, 25 March, a national holiday in Greece, calls for the traditional Cod and Garlic Sauce.
Cod recipe: In a bowl, add 300g flour, baking powder, sugar, salt and mix well. Add 500ml cold beer and stir with a whisk for 1-2 minutes until there are no lumps. Dust the pieces of cod with plain flour, making sure to cover the entire surface. Then dip the piece into the batter one by one. Fry for 4-5 minutes in extra virgin olive oil until golden. Remove and place on absorbent paper. Serve with garlic sauce.
Garlic sauce recipe: Blend bread soaked in water, 7 garlic cloves, vinegar, oil, salt and a little dry bread to thicken as needed. To further enhance the flavour, add some naturally infused Kyklopas garlic flavoured olive oil.
