World Olive Day was celebrated on the 26th of November by tasting fresh early harvest olive oil.
The oil tasting and the food pairing were held by Irini Kokolaki, an extra olive oil taster, graduate of the University of Jaén in Spain and an expert in products of olive groves and similar industries. She’s also a degree holder of the University of Andalusia. In her interview in the article of the Athens - Macedonian News Agency, she mentions that if someone wants to learn the secrets of the olive oil, he has to activate all of his senses and especially the senses of the taste and the smell. “The participants of the tasting process should have finished their coffee half an hour before the course. It is also recommended to avoid the use of perfumes or other cosmetics with an intense odor which can interfere with their ability to smell. The first thing we have to do is to embrace the glass with our palm to warm the olive oil, then we smell it and finally we taste it. These are the three basic phases” she explains. She also points out that the superior quality olive oil smells only fruits and vegetables, so it is firstly distinguished by its aroma.
