The olives are harvested in October when they are at their best quality. They are then processed on the same day in our certified organic olive mill, ensuring ideal conditions for oil extraction through cold pressing, preserving all the nutrients and the fruit’s fresh aroma.

After production, the olive oil is immediately filtered and stored in special nitrogen-sealed tanks to ensure its perfect quality and unrivaled freshness until the very last drop.

Its flavor stands out with a medium to high-intensity fruity aroma, offering notes of fresh green olives, green banana, artichoke, and freshly cut grass. Each drop is an authentic experience that will transport you to the heart of Greek nature.

All our olive oils are produced from our own private estates, cultivated with the utmost respect for the environment and following strict environmental regulations.
